The TASTE Summit is an initiative to bring the culinary and academic world closer together. Chefs and academics can learn a lot from each other. Chefs know that dishes must be tasty and know how to do it. Academics know that our current food behavior is not sustainable and that we have to change. We organize TASTE Summits in the hope of contributing to a better world, with more attention for the value of good food.

Highly processed factory food is conquering the world. It is made to be delicious and to eat a lot. But what about essential nutrients such as vitamins and minerals? Can you just copy it synthetically and then add it? It is becoming increasingly clear that these 'ultra-processed foods' have major consequences for agriculture and public health. There is a direct relationship with the increase in all kinds of lifestyle diseases such as obesity, type 2 diabetes, cardiovascular disease and some forms of cancer. Carlos Monteiro is one of the authors of the Brazilian Nutrition Directive who advises to start cooking again on the basis of real, at best slightly processed ingredients.
